Les participants de ce groupe d&rsquo;exploitation sont IRTA, RADI S.L, SERHS FOOD, GUSTOS MERITEM et PESCADOS PUIGNAU.<\/p>\n<p>Le projet VALORAFOOD a pour objectif de faire conna\u00eetre <strong>le secteur de la p\u00eache et le secteur industriel<\/strong> de la transformation du poisson. Son objectif est <strong>d&rsquo;identifier les exc\u00e9dents r\u00e9els<\/strong> des entreprises de transformation du poisson et de <strong>concevoir des directives pour r\u00e9\u00e9valuer les exc\u00e9dents sous la forme de nouveaux produits<\/strong> pr\u00e9alablement convenus. Tout cela se fait \u00e0 travers des rencontres, des visites, des focus groups et des ateliers immersifs, entre autres.<\/p>\n<p>Cependant, avant de concentrer les efforts sur le d\u00e9veloppement de produits innovants \u00e0 haute valeur nutritionnelle, il est n\u00e9cessaire de conna\u00eetre <strong>plusieurs d\u00e9fis<\/strong> actuellement m\u00e9connus de la plupart:<\/p>\n<ol>\n<li>\u00a0La quantification des surplus de l&rsquo;esp\u00e8ce \u00e0 valoriser.<\/li>\n<li>La quantification des volumes, la r\u00e9gularit\u00e9 et la sp\u00e9cialisation des diff\u00e9rentes esp\u00e8ces \u00e0 r\u00e9\u00e9valuer.<\/li>\n<li>La conception productive des diff\u00e9rents produits \u00e0 valoriser selon les essences s\u00e9lectionn\u00e9es : formule, transformation, stockage, etc.<\/li>\n<li>Caract\u00e9ristiques que le produit devrait avoir pour \u00eatre utilis\u00e9 avec la technologie Pulse Combustion Dryer ou autres.<\/li>\n<li>Faisabilit\u00e9 technique et \u00e9conomique des produits con\u00e7us.<\/li>\n<\/ol>\n<p>Le carpaccio de crevettes fra\u00eeches, les hamburgers de poisson, les saucisses de poisson, les sauces, la poudre de crabe bleu, les p\u00e2t\u00e9s et les produits secs pour les soupes instantan\u00e9es, sont quelques exemples de produits appr\u00e9ci\u00e9s du consortium.<\/p>\n<p>Concernant la cr\u00e9ation des nouveaux produits, ceux-ci ne seront pas seulement destin\u00e9s \u00e0 la <strong>restauration commerciale<\/strong>, mais aussi aux<strong> \u00e9coles, h\u00f4pitaux et r\u00e9sidences<\/strong>, o\u00f9 il y aura \u00e9galement une <strong>am\u00e9lioration de la valeur nutritionnelle<\/strong> pour pr\u00e9parer des plats pour les patients atteints de dysphagie et d&rsquo;autres maladies connexes.<\/p>\n<p><strong>L&rsquo;innovation<\/strong> est \u00e0 la base de ce projet, qui vise \u00e0 promouvoir le secteur avec des produits utiles et \u00e0 <strong>faibles \u00e9missions<\/strong> qui garantissent un <strong>d\u00e9veloppement durable<\/strong> du littoral, ainsi qu&rsquo;une comp\u00e9titivit\u00e9 et une diversification accrues du secteur.<\/p>\n<p>Dans le cadre de ce groupe d&rsquo;exploitation, nous voyons une opportunit\u00e9 de cr\u00e9er un <strong>HUB de connaissance et de transformation des exc\u00e9dents<\/strong> avec des sous-produits par d&rsquo;autres consortiums et d&rsquo;aider \u00e0 la p\u00e9rennit\u00e9 de certains groupes \u00e0 faible productivit\u00e9.<\/p>\n<p>Pour plus de d\u00e9tails sur le projet, vous pouvez acc\u00e9der<a href=\"https:\/\/www.clusterfoodservice.org\/en\/the-llotja-de-futurs-operating-group-concludes-conclusions-challenges-opportunities-and-future-projects\/\"><strong> ici.<\/strong><\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>VALORAFOOD est constitu\u00e9 d&rsquo;un groupe op\u00e9rationnel coordonn\u00e9 par le Foodservice Cluster qui poursuit les travaux men\u00e9s par le projet Llotja de Futurs.
