Ces plats sont sp\u00e9cialement con\u00e7us pour les personnes souffrant de dysphagie et ayant des difficult\u00e9s \u00e0 m\u00e2cher. Il s\u2019agit d\u2019un catalogue ax\u00e9 sur le r\u00e9gime m\u00e9diterran\u00e9en, utilisant des produits locaux et de saison, tout en conservant les saveurs traditionnelles.<\/p>\n<p data-start=\"990\" data-end=\"1334\">Le congr\u00e8s fait partie du Projet de S\u00e9curit\u00e9 en Dysphagie-DOF (2013 \u00e0 aujourd\u2019hui), promu par le CRESCA (Centre de Recherche en S\u00e9curit\u00e9 et Contr\u00f4le Alimentaire de l\u2019UPC), et vise \u00e0 am\u00e9liorer la qualit\u00e9 de vie des patients et r\u00e9sidents souffrant de dysphagie oropharyng\u00e9e (DOF) dans tous les domaines : social, sanitaire et \u00e9ducatif sp\u00e9cialis\u00e9.<\/p>\n<p data-start=\"1336\" data-end=\"2401\">SERHS Food a pr\u00e9sent\u00e9 ce nouveau catalogue de <em><strong>plats cuisin\u00e9s \u00e9labor\u00e9s dans la Cuisine de Haute Performance<\/strong><\/em>, destin\u00e9 aux professionnels sociosanitaires qui doivent proposer des r\u00e9gimes \u00e0 texture modifi\u00e9e. Cr\u00e9\u00e9 par une \u00e9quipe pluridisciplinaire compos\u00e9e de di\u00e9t\u00e9ticiens, R&amp;D, qualit\u00e9, gastronomie et autres, et avec la participation d\u2019experts m\u00e9dicaux, le catalogue compte actuellement 26 r\u00e9f\u00e9rences. Les r\u00e9gimes \u00e0 texture modifi\u00e9e (RTM), con\u00e7us pour les personnes atteintes de dysphagie oropharyng\u00e9e, sont souvent peu app\u00e9tissants, monotones, de texture inad\u00e9quate (liquides, grumeaux ou filaments) et d\u00e9ficients sur le plan nutritionnel. Le principe \u00ab la nourriture soigne \u00bb a guid\u00e9 tout le travail. La conception de ces r\u00e9f\u00e9rences prend en compte le concept de la Triple Adaptation du R\u00e9gime M\u00e9diterran\u00e9en : adaptation organoleptique, adaptation nutritionnelle et adaptation texturo-rh\u00e9ologique. Cette s\u00e9lection de plats de cinqui\u00e8me gamme se concentre sur le<em> <strong data-start=\"2297\" data-end=\"2328\">niveau 4 de l\u2019\u00e9chelle IDDSI<\/strong><\/em>, correspondant \u00e0 la texture adapt\u00e9e aux patients suivant un r\u00e9gime mix\u00e9.<\/p>\n<p data-start=\"2403\" data-end=\"2802\">Les plats cuisin\u00e9s \u00e0 texture modifi\u00e9e se caract\u00e9risent par une texture homog\u00e8ne, un apport calorique et prot\u00e9ique optimal, une teneur majoritairement faible en sel, sont \u00e9labor\u00e9s avec 100 % d\u2019huile d\u2019olive vierge extra, ont une dur\u00e9e de conservation de 45 jours au r\u00e9frig\u00e9rateur et respectent des normes strictes de s\u00e9curit\u00e9 alimentaire, tout en offrant une grande vari\u00e9t\u00e9 de couleurs et de saveurs.<\/p>\n<p data-start=\"2804\" data-end=\"4027\">Pour faciliter la gestion dans les \u00e9tablissements, les r\u00e9f\u00e9rences sont class\u00e9es selon trois niveaux de calories et de prot\u00e9ines. Les plats sont propos\u00e9s r\u00e9frig\u00e9r\u00e9s en formats multipor\u00adtion de 2,9 kg ou 0,85 kg, assurant un \u00e9quilibre optimal en apport calorique et prot\u00e9ique lors de la composition des menus. La gamme comprend est compos\u00e9 de : <em><strong>8 pur\u00e9es de l\u00e9gumes<\/strong> (brocoli, pommes de terre, courgette, courge, l\u00e9gumes, petits pois, \u00e9pinards, carotte), <strong>6 plats texturis\u00e9s prot\u00e9in\u00e9s <\/strong>(omelette, saumon, poisson blanc, b\u0153uf, poulet, dinde), <strong>6 pur\u00e9es et tritur\u00e9s de l\u00e9gumineuses et p\u00e2tes<\/strong> (pois chiches aux \u00e9pinards, lentilles aux l\u00e9gumes, haricots secs aux l\u00e9gumes, p\u00e2tes \u00e0 la tomate, garniture de pois chiches et de haricots), <strong>4 plats uniques<\/strong> (tritur\u00e9 de minestrone et viande mixte, tritur\u00e9 de minestrone et \u0153uf, tritur\u00e9 de dinde avec courgette, tritur\u00e9 de l\u00e9gumes et merlu) et <strong>2 sauces<\/strong> (verte, samfaina).<\/em><\/p>\n<p data-start=\"4029\" data-end=\"4444\">Selon Raimon Bag\u00f3, directeur g\u00e9n\u00e9ral de SERHS Food : \u00ab Avec ces produits, les utilisateurs peuvent appr\u00e9cier la saveur de chaque ingr\u00e9dient s\u00e9par\u00e9ment \u2013 le poisson, la samfaina, l\u2019omelette \u2013 et, en m\u00eame temps, les professionnels disposent d\u2019un grand nombre de projet, initialement destin\u00e9 \u00e0 <strong>am\u00e9liorer la nutrition des \u00e9l\u00e8ves dysphagiques<\/strong> de l\u2019\u00e9cole de l\u2019Arbo\u00e7, est devenu en quelques ann\u00e9es un domaine consolid\u00e9 et \u00e9tendu \u00e0 plusieurs \u00e9tablissements, notamment \u00e0 l\u2019h\u00f4pital de Matar\u00f3, avec des objectifs clairement d\u00e9finis pour 2026, visant \u00e0 am\u00e9liorer la sant\u00e9 des utilisateurs dans les \u00e9coles sp\u00e9cialis\u00e9es, les h\u00f4pitaux et les \u00e9tablissements sociosanitaires.<\/p>\n<p data-start=\"80\"
