{"id":15059,"date":"2025-04-08T11:40:23","date_gmt":"2025-04-08T09:40:23","guid":{"rendered":"https:\/\/serhsfood.com\/?p=15059"},"modified":"2025-04-08T11:41:22","modified_gmt":"2025-04-08T09:41:22","slug":"regimes-texture-modifiee-mortier-dhopital","status":"publish","type":"post","link":"https:\/\/serhsfood.com\/fr\/novetats\/regimes-texture-modifiee-mortier-dhopital\/","title":{"rendered":"SERHS FOOD ATTRIBU\u00c9 \u00c0 LA GESTION DU SERVICE DE RESTAURATION DE L&rsquo;H\u00d4PITAL DE MATAR\u00d3"},"content":{"rendered":"<p class=\"\" data-start=\"5010\" data-end=\"5381\">SERHS Food, en tant qu&rsquo;attributaire de la gestion du service de restauration de l&rsquo;H\u00f4pital de Matar\u00f3 (Consortium de Sant\u00e9 du Maresme), a servi 14 806 r\u00e9gimes \u00e0 texture modifi\u00e9e (RTM) aux patients atteints de dysphagie oropharyng\u00e9e (DO), dont 4 951 de texture E et 9 855 de texture C.<\/p>\n<p class=\"\" data-start=\"5383\" data-end=\"6299\">L\u2019\u00e9quipe de professionnels de sant\u00e9 et de chercheurs dirig\u00e9e par le Dr. Pere Clav\u00e9 a favoris\u00e9 la consolidation de ces r\u00e9gimes \u00e0 la fois \u00e0 l\u2019H\u00f4pital de Matar\u00f3 et dans les centres associ\u00e9s, augmentant la prescription et am\u00e9liorant la qualit\u00e9 nutritionnelle. Le rythme actuel de prescription de r\u00e9gimes \u00e0 texture modifi\u00e9e (RTM) pour dysphagie dans le centre est d\u2019environ 50 patients\/jour, avec une identification pr\u00e9cise par l\u2019\u00e9quipe soignante des patients n\u00e9cessitant ces r\u00e9gimes, tout en garantissant un excellent respect de la triple adaptation du r\u00e9gime m\u00e9diterran\u00e9en (contr\u00f4le de la viscosit\u00e9 et de la texture, contenu calorique et prot\u00e9ique et palatabilit\u00e9). En 2023, l\u2019H\u00f4pital de Matar\u00f3 a servi 9 766 r\u00e9gimes \u00e0 texture modifi\u00e9e, dont 3 511 \u00e9taient de texture E et 6 255 de texture C. L\u2019augmentation a donc \u00e9t\u00e9 tr\u00e8s significative. Le centre dispose d\u2019une cuisine et d\u2019une \u00e9quipe sp\u00e9cifique pour ces pr\u00e9parations.<\/p>\n<p class=\"\" data-start=\"6301\" data-end=\"6703\">Selon les donn\u00e9es des techniciens, la valeur calorique totale de ces menus est d\u2019environ 1800 kcal et 80g de prot\u00e9ines, r\u00e9pondant aux besoins nutritionnels des patients souffrant de dysphagie et garantissant des r\u00e9gimes adapt\u00e9s \u00e0 leur capacit\u00e9 de mastication et de d\u00e9glutition ainsi qu\u2019aux besoins \u00e9nerg\u00e9tiques et prot\u00e9iques. La viscosit\u00e9 est rest\u00e9e dans les param\u00e8tres \u00e9tablis (1 634,71\u00b1456,25 mPa\u00b7s).<\/p>\n<p class=\"\" data-start=\"6705\" data-end=\"7502\">Les donn\u00e9es de l&rsquo;\u00e9cole d&rsquo;\u00e9ducation sp\u00e9cialis\u00e9e de l&rsquo;Arbo\u00e7 \u00e0 Matar\u00f3 sont \u00e9galement remarquables. Ce projet pionnier dans le domaine de la dysphagie, auquel participe \u00e9galement SERHS Food, a mis en place des r\u00e9gimes \u00e0 texture modifi\u00e9e et un programme d\u2019hydratation adapt\u00e9 pour garantir une alimentation s\u00fbre et ad\u00e9quate \u00e0 tous les \u00e9l\u00e8ves (environ 30 personnes, 6 000 r\u00e9gimes par an). Ce centre, qui ne dispose pas de cuisine sur place, pr\u00e9pare les repas dans la Cuisine de Haute Performance de Matar\u00f3, et ils sont transport\u00e9s et r\u00e9g\u00e9n\u00e9r\u00e9s dans le centre. Cette approche innovante a entra\u00een\u00e9 une am\u00e9lioration significative de la sant\u00e9 des enfants et des jeunes atteints de dysphagie, un trouble qui complique des actions quotidiennes comme manger et boire, et qui peut entra\u00eener des probl\u00e8mes graves.<\/p>\n<h2 data-start=\"6705\" data-end=\"7502\"><strong data-start=\"7504\" data-end=\"7579\">Nouveau catalogue de plats cuisin\u00e9s pour les professionnels de la sant\u00e9<\/strong><\/h2>\n<p class=\"\" data-start=\"7504\" data-end=\"8529\">L&rsquo;Espai Matar\u00f3 Cuida-CareCityLab a accueilli en mars une journ\u00e9e d\u00e9di\u00e9e \u00e0 la pr\u00e9sentation d\u2019initiatives innovantes dans le domaine de l\u2019int\u00e9gration sociosanitaire, avec un accent particulier sur la dysphagie, le vieillissement et les handicaps intellectuels. Lors de cette journ\u00e9e, organis\u00e9e par la Fondation Sant\u00e9 du Consortium Sanitaire du Maresme et la Fondation El Maresme, en collaboration avec la mairie de Matar\u00f3, le mod\u00e8le de soins int\u00e9gr\u00e9s alliant sant\u00e9 et droits sociaux a \u00e9t\u00e9 mis en valeur. C\u2019est dans ce cadre que SERHS Food a <a target=\"_blank\" href=\"https:\/\/serhsfood.com\/wp-content\/uploads\/Cataleg-CareCityLab-CAST_compressed.pdf\" rel=\"noopener\"><strong>pr\u00e9sent\u00e9 un nouveau catalogue de plats cuisin\u00e9s \u00e9labor\u00e9s dans la Cuisine de Haute Performance<\/strong><\/a>, destin\u00e9s aux professionnels sociosanitaires ayant besoin de couvrir les r\u00e9gimes \u00e0 texture modifi\u00e9e. D\u00e9velopp\u00e9 par une \u00e9quipe pluridisciplinaire compos\u00e9e de di\u00e9t\u00e9ticiens, R&amp;D, qualit\u00e9, gastronomie, entre autres, et avec la participation et collaboration de l\u2019\u00e9quipe du Dr. Pere Clav\u00e9, 20 r\u00e9f\u00e9rences ont \u00e9t\u00e9 cr\u00e9\u00e9es.<\/p>\n<p class=\"\" data-start=\"8531\" data-end=\"9264\">Les r\u00e9gimes \u00e0 texture modifi\u00e9e (RTM), con\u00e7us pour les personnes atteintes de dysphagie oropharyng\u00e9e (DO), souffrent souvent d\u2019\u00eatre peu app\u00e9tissants, monotones, avec une texture inappropri\u00e9e (comme des liquides, des grumeaux ou des fils) et des d\u00e9ficits nutritionnels. Le principe que \u00ab la nourriture gu\u00e9rit \u00bb a \u00e9t\u00e9 pr\u00e9sent dans ce catalogue. Pour la r\u00e9alisation de ces r\u00e9f\u00e9rences, le concept de la Triple Adaptation du r\u00e9gime m\u00e9diterran\u00e9en aux r\u00e9gimes \u00e0 texture modifi\u00e9e a \u00e9t\u00e9 pris en compte : adaptation organoleptique, adaptation nutritionnelle, adaptation texturale-rh\u00e9ologique. Cette s\u00e9lection de plats de 5e gamme se concentre sur le niveau 4 de l&rsquo;\u00e9chelle IDDSI, adapt\u00e9 aux patients atteints de dysphagie ayant un r\u00e9gime p\u00e2teux.<\/p>\n<p class=\"\" data-start=\"9266\" data-end=\"9542\">Afin de faciliter la gestion dans les centres de travail, les r\u00e9f\u00e9rences sont class\u00e9es en trois niveaux de calories et de prot\u00e9ines. Cela garantit un \u00e9quilibre optimal des apports calorico-prot\u00e9iques lors de la pr\u00e9paration des menus dans les centres.
